Reminders
Psalm 136 is right up my alley. It is full of repetition which I know is what my heart needs in order to continue to know truth. This Psalm talks about giving thanks to God and what he has done:
Give thanks to the Lord or lords.
His faithful love endures forever.
Give thanks to him who alone does mighty miracles.
His faithful love endures forever.
It goes on to talk about all the wonders of what he has done.
But what I love about it it is that the end of each line of a wonder, it repeats His faithful love endures forever. This steady repetition reminds me over and over that his love is always here with me.
It is repeated 26 times.
I don't know if David wrote this Psalm, but whoever did is just like me...in need of letting these words pour over my soul that so easily forgets how great a love surrounds me.

New Recipes
I am excited about this website and the cookbook soon to be waiting for me at the library and on my wishlist of books right now.
I read about Chloe probably one day at the Y working out reading a magazine. She is a vegan chef and went on the show Cupcake Wars, which I have never seen since I don't have cable. I think it is a cooking show where they only make cupcakes and I highly doubt they ever had anyone who wanted to make Vegan cupcakes by choice and compete with cupcakes full of the D.
But she went on and I heard was a big hit (atleast according to this article). All that to say she has a cookbook out which I am interested in eye-ing. I did check out her blog/website today and found a few recipes I want to try out.
First on the list will be Mac-n-Cheese. I know the idea probably sounds gross and I was never a huge mac-n-cheese fan pre-DF days, but for some reason it is one of those things I occasionally want. I have found a recipe that was decent, but not great. One day Adrienne tried one that was not so great. I think it is a challenging one to capture unlike a lot of other recipes that can be easily adapted to be vegan. So I will give Chloe's a try and let you know how it goes.

Pumpkin Ravioli
When we were in Italy this summer my favorite meal (or I may have gotten it two nights in a row because it was so melt-in-your-mouth delicious) was Pumpkin Ravioli. It has just a hint of pumpkin flavor and really is incredibly amazing, especially when you eat it in the Italian culinary capital of Parma.
So, I have been searching for a recipe that I can actually make and found this. Well, actually it was a combo of two recipes...I had to get a little creative to come up with something I could eat in a non-dairy fashion.
I will start with a photo to entice you
So ingredients:
1 can pumpkin
1 package won-ton wrappers (yes, I cheated and did not make my own dough for the ravioli)
2 T breadcrumbs
2 T fresh grated parmesean cheese
1/2 tsp salt
1/2 tsp fresh minced sage
1/4 tsp ground pepper
1/8 tsp nutmeg
Sauce:
1/2 cup butter (or a little less)
6 fresh sage leaves ripped into several pieces or 3/4 tsp ground sage
1/4 tsp nutmeg
Use paper towels to absorb some of the water from the pumpkin.
Mix pumpkin, breadcrumbs, cheese, spices together
Lay out several won-ton wrappers at a time. Get a small cup of water to use to seal the wrappers together.
Place a small amount of pumpkin mixture (about 1-2 tsp) onto the center of a won-ton, fold over into a triangle shape. Dip your fingertip in water and run it on the inside corners of the won-ton wrapper and press the two sides together to seal the won-ton.
Continue until all the pumpkin mixture is in the ravioli.
Bring a pot of water to boil. Place 10-15 (depending on size of pot) ravioli into the water and let boil until they float to the surface (3-5 minutes). Remove and keep warm while cooking the rest of the ravioli.
While the ravioli are cooking place the butter for the sauce in a saucepan and melt over medium heat. Add the sage and cook for a minute or two. Remove from heat and add the nutmeg.
Pour sauce over the ravioli and serve, sprinkling more cheese as desired.
I made this for my family when they were in town and they all liked it too. And Dad and I discovered that the leftover sage goes well on salad...gives it a different spin.

Sharing
Last week I was talking to my friend about her daughter learning how to share. We were laughing about the funny things her daughter is doing to try and keep from sharing and what a tough lesson it is to learn.
I have been thinking about how this relates to me.
I am the same way...I don't want to share control. No matter how much I think I am getting "better" at it, I still find myself fighting to be in control of my life. Whether it is trying to be in control of how people view me or what my future holds or how I feel, I want to know that I will feel good or be okay. I spend so much effort protecting my comfort and the things I think will make me happy, when my freedom and fulfillment lie in submitting to God, in trusting his control.
Somehow it helps me to put pictures or ideas to the complexities of my heart. And thinking about it in this way has helped me see how many ways I fight to share control of my life all the time. Thankful for his grace that continues to love and provide and be faithful to such a broken me.

In the Press
Since I have written a lot about my trips to Kenya on my blog I will keep you up on the latest happenings. Our trips were featured in the Samaritan's Purse Newsletter. You have to scroll down a few pages to read about our trips.
There aren't definite days set for the next trip but we are already working on some things for the next trip. And we are in the works on establishing a non-profit to help with patient costs, education, etc for the trip. It is always so amazing to see how each person brings something different to the table and how each person is an essential part to the team.
And my mom's organization was featured on the local news. Here is the video...she has a cameo in it!

A friend and I are making our way through the Screwtape Letters by C.S. Lewis. If you haven't read it, it is written from the perspective of an elderly devil who is counseling a novice devil in how to corrupt humans. And in case you were wondering...the first 2 juice recipes were really good. Better than I thought. I had some hesitations about how good they would taste but both were really great and surprisingly filling.

Juicer
Today I bought a juicer, off Craig's List, and no I didn't go alone to pick it up.
I am about to try it out for the first time but am excited to have it. I have been slightly intrigued by the idea of juicing since a friend of mine, also with an autoimmune disease, says she feels best when she does it. Then John and I watched Fat, Sick and Nearly Dead over Christmas. This is a documentary about a guy who starts a juice fast and in the process loses a lot of weight but is also able to essentially cure himself of an autoimmune condition and get off all the meds he takes for it. It is funny and eye opening and fascinating. So I am going to try some juicing. I don't think I will be doing any kind of juice fast but who knows.
Today I am going to try carrot apple juice...will tell you how it goes later!
